Duo of courgette

  • 4 small courgettes 2 green and 2 yellow
  • 4 green asparagus
  • 2 garlic cloves or onion
  • 1 tsp Espelette pepper
  • 1 tbsp of Essence de Vie oil Vigean
  • ½ tbsp of coconut oil Vigean
  • Salt, pepper

According to a cook recipe from Frédérique Cailloce, Culinary Advisor Vigean

  1. Dice the courgettes
  2. Chop the garlic or onion
  3. Scald your asparagus with salt water a few minutes, cut into small pieces and keep the spikes for decoration
  4. Put the garlic and courgettes in a frying pan with Vigean coconut oil, cook gently for ¼ hour (your courgettes must be still crunchy)
  5. Add the chilli pepper, salt and pepper
  6. Arrange in the plates, decorate with the asparagus, add in final touch the Essence de Vie oil  Vigean
