Pesto leaves of celery branch
with virgin sesame oil Vigean

  • 115 g de feuilles de céleri branche (avec très peu de tiges)
  • 60 g d’amandes
  • 65 g d’huile vierge de sésame Vigean
  • 30 g de jus de citron fraîchement
  • Sel


  1. In a skillet, roast the almonds and let them cool.
  2. Wash the celery leaves carefully and dry them between two clean towels.
  3. In the bowl of the robot, remove all the ingredients, starting with the sesame oil, the lemon, the leaves and finish with the almonds and the salt.
  4. Mix in several times until you obtain a green paste.
  5. Collect pesto and place in jam jars and top with a thin layer of Vigean sesame oil.

This pesto leaves celery branch is easy to make. You can use it in different ways according to your desires. This sauce is to be used cold on a hot dish.
For the presentation, you can sprinkle the sauce with some sesame seeds.
