INGREDIENTS


  • 2 cooked beetroots
  • 1 tablespoon of flaxseed oil / orange
  • 1 pinch of salt
  • 1 pinch of Espelette pepper
  • 1 tablespoon fresh cream
  • 1 clementine




In a blender mix  all except Clementine, have the contents of the blender into 4 small individual verrine and nick the clementine quarters and arrange astride the wall of the glass and cut a few pieces of tangerine in the glass, and finally chill 30 minutes before serving (not too cold otherwise the oil will lose its flavour).
