On the palate, the attack appears more rustic. Its
use is evident in all the nut-based desserts, but also with bitter vegetables.
This also marks the creation of the House Vigean in 1930.
This oil is produced using a traditional method, which involves grinding the kernels to the grindstone.
The paste then obtained is toasted incast iron covers prior to extraction of the oil by small presses.
