Cucumber cold soup

Cold cucumber soup with organic flaxseed oil Vigean

- Wash cucumbers and mint and dry well.
- Roast the almonds in a skillet without fat (until lightly coloured).
- Peel the cucumbers and cut them in 2 to remove the seeds.
- In a blender, add the garlic, the 2 goat yogurts, the mint leaves, 6 tablespoons water, cucumbers, pepper and salt and mix with the organic flaxseed oil Vigean.
- Put in the fridge before serving.
- Divide into individual plates and garnish with roasted almonds and chopped mint leaves.
